So, uh, this probably isn't going to improve anyone's opinion of my observational skills, but I just realized there are two bios chips on the x2100 motherboard? One's by the mpcie slots and is a Macronix MX25L12835F, and the other's by the USB-C port -- that one's a Winbond 25Q80DVSIG. Finding this gave me a bit of a scare -- I'd already desoldered the chip I believed was the BIOS chip, and finding another candidate really shocked me.
I checked my command history, and I'm pretty certain all my interactions have been with the former, so I'm no longer quite as flustered -- but what's the other chip for?

X2100 has two bios chips?

Pretty sure the macronix chip is the bios chip. There are tons of other ways machines can use flash chips
